For most people, when you mention mayonnaise, the first association is unhealthy and fatty foods. But with this keto homemade mayonnaise, it doesn’t have to be like this.
- 1 egg yolk
- 1 cup avocado oil or light olive oil
- 1 tbsp Dijon mustard
- 2 tsp lemon juice
- Mix the egg and mustard with a mixer and slowly add the oil in a thin stream. The mayonnaise should start to thicken. Continue mixing until all the oil has been added and the mayonnaise has hardened.
- Add lemon juice. Mix again and season with salt and pepper. Taste, adjust the seasoning and perhaps add more lemon juice if needed.
- Let the mayonnaise rest in the fridge before serving.
