
Tiramisu only needs a few fine adjustments to become ketogenic. Instead of sugar, erythritol is used and the ladyfingers are replaced by a homemade base. Almost everyone loves Tiramisu, and if not, it’s mostly coffee or amaretto, which isn’t much appreciated by individuals (or children). If you make your own tiramisu, you can easily omit both, or replace them with something else.
Ingredients for 10 Portions
4 egg-white
50g Eryhtrit (e.g. Xucker light)
100g ground hazelnuts (e.g. march ground hazelnuts)
100g ground almonds (e.g. march ground almonds)
60g butter at room temperature (e.g. butter from grass-fed cows)
1 espresso
1-2 tbsp Amaretto (e.g. Disaronno Amaretto)
1 pinch of salt (e.g. Azafran pink Himalaya salt from Pakistan)
FOR THE CREAM:
4 egg yolks
50g Eryhtrit (e.g. Xucker light)
500g Mascarpone
250ml sour cream
Cocoa powder for dusting (e.g. Indigo Herbs organic cocoa powder)
Preparation
- Preheat the oven to 160 degrees and cover a baking tray with baking paper. In a bowl, mix the soft butter with the Eryhtrit and whip until foamy. Beat the egg whites with a pinch of salt until stiff. Thoroughly mix the nuts with the foamy butter and then carefully add the egg whites.
- Place the dough on the baking tray and distribute evenly. Bake for 20-30 minutes until completely cooked. In the meantime, you can mix the cream. Mix egg yolk and erythritol in a bowl, which you then place in a water bath. This creates a creamy mass while stirring constantly.
- Then add the mascarpone. Beat the cream until stiff and add it to the mascarpone cream. When the dough is ready, take it off the tray, let it cool and cut it into two pieces. Mix espresso with amaretto. Put half of the dough in a baking dish at the bottom and put half of the espresso mixture on top.
- Then spread one half of the cream on the base. Then pour the second dough over it and pour espresso over it. Finally, add the rest of the cream. Now put the Tiramisu in the fridge for at least 4 hours. Before serving it is sprinkled with cocoa powder.
