
Our today’s dish is an absolute classic, but also a grandiose low carb dish.
Ingredients for two portions
- 400 g pork fillet
- 1 pinch salt
- 1 pinch of pepper
- 1 shot of oil
Ingredients for the mushroom sauce
- 400 g mushrooms, fresh
- 180 ml cream fines
- 1 piece onion, medium size
- 120 ml vegetable broth
- 0,5 tbsp butter
- 1 pinch salt
Ingredients for the decoration
- 1 bundle of chives
Preparation
- For the pork fillet with mushrooms, first cut the pork fillet into medallions of equal size, season with salt and pepper. Heat the oil in a frying pan and sauté the meat for 2 minutes on each side. Then wrap in aluminium foil and place in the preheated oven at 120°C top and bottom heat for 10 minutes.
- Afterwards wash the mushrooms, remove the stalk and cut into thin slices. Peel and finely chop the onion. Put the butter in the pan and fry the onion. Add the finely chopped mushrooms and deglaze with a dash of vegetable stock. Now refine with Cremefine and let simmer for about 8-10 minutes. Stir with a wooden spoon from time to time. Season with a pinch of salt and refine with finely chopped chives.
- Now prepare preheated plates, place the finished pork fillet pieces on the plate, garnish with the mushroom sauce and serve.
