With this quick and easy recipe, you can prepare the popular dessert in just a few minutes and know exactly what’s inside.
- 1 vanilla pod
- 500 ml milk or as an alternative 300 ml milk and 200 ml cream
- 3 egg yolks
- 2 tbsp milk
- 35 g starch
- 1 tbsp sugar
- With a sharp knife, cut the vanilla pod in half lengthwise and scrape out the dark pulp. Then measure the milk in a measuring cup and bring to the boil in a pot together with the vanilla pod and the pulp. The pod should always be boiled as it contains a lot of aroma. In the meantime, mix the egg yolk with two tablespoons of milk and 35 grams of starch until smooth. Be careful not to form unwanted starch nodules and egg yolk flakes.
- Take the vanilla pod from the boiling milk and mix in the starch mixture. Bring the vanilla pudding to the boil again. Then pour the hot pudding into a pudding mould or bowl rinsed with cold water and leave to cool for a few hours. You can sprinkle the hot pudding with sugar or cover the surface with cling film to prevent skin from forming. Once the dessert has cooled down, it is placed on a plate and decorated.
