
Watermelon with cheese? Yes, that is possible too. This is a recipe with fresh ingredients. Ideal for summer – easy to prepare and fully healthy.
Ingredients for 4 portions
- 100 g pistachios roasted in shell
- 300 g cucumber
- 2,5 kg watermelon
- 150 g feta cheese
- 2 tomatoes
- 1 red onion
- 4 peppermint stems
- 4 stems parsley
- 1 clove of garlic
- 4 tablespoons white balsam vinegar
- 2 tbsp sunflower oil
- salt
- pepper
Instructions
- Remove the pistachio kernels from the shells and chop. Wash, clean and chop the cucumber. Cut the melon into slices, cut the flesh from the peel and dice. Dice the cheese. Peel and chop the onion. Wash the herbs and shake dry. Cut the leaves from the stalks and chop.
- Peel the garlic and press it through a garlic press. Mix vinegar and oil, season with salt, pepper and garlic. Mix melon, cucumber, onion, cheese, pistachios, tomatoes, herbs and sauce and serve.
